Hello Everyone! As promised, last week I did say that I will share some easy yummy baked good recipes. As I do now make my baked goods from scratch, I will share a beginner friendly way to make some sweets that will have people ask for your hand in marriage...
Lets start out with a classic, tres leches.
Now, I like to do them in the form of cupcakes!
Ingredients:
Strawberry or Vanilla cake mix
Heavy whipping cream
Granulated Sugar
Vanilla extract
Whole milk
A can of condensed milk
A can of evaporated milk
Strawberries
Directions:
Follow the simple instructions on the boxed cake for the cupcakes, and once finished baking, allow cupcakes to cool down for 30 minutes.
In the mean time, you want to mix a cup of milk, a can of condensed milk and a can of the evaporated milk in a bowl (and if you want more of a cinnamon flavor, throw some in there).
After the cupcakes have cooled, poke holes in the cupcakes and simply squeeze in all the milk into the cupcakes. And even though, all of the milk may seem to be too much.. IT'S NOT!
Now, for the whipped cream, all you have to do is throw in 2 cups of heavy whipping cream, 2 TBSP of sugar and a splash of vanilla.
Mix until it is fluffy
Now, slice up some strawberries and assemble.
After assembling, please allow the cupcakes to refrigerate over night! Its important to do so.
You will then get a little something like this...
I did add some vanilla jello to the whipped cream so it can stabilize better and added some of the tres leches mixture into the pipettes and pink dye in the whipped cream for presentation
To add on, here is a recipe that is more tedious than the simple tres leches, yet still beginner friendly. Here is how you make Swedish Heart Cookies.
Ingredients:
3/4 cup + 2 TBSP of softened unsalted butter
1 cup of caster sugar
2 cups of plain flower
1 egg
1 TSP of vanilla extract
1/2 TSP baking powder
1/2 TSP of salt
Pre-made raspberry jam
Vanilla butter cream
Directions:
In a bowl, mix the softened butter with sugar and beat until soft
Add the egg and vanilla, and mix!
Swift in the powdered sugar + baking powder and then fold
Rest the dough in the fridge for an hour
After resting, roll the dough and cut out small even circles
After you have your even number of circles, use the back of a spoon or fork to indent a heart in half of those circles.
Bake in the oven at 180 degrees F. for 15 minutes
After the cookies have chilled for 30 minutes, add in that jam to the indented hearts
You then get one cookie with the indented heart, one without and slab on the vanilla butter cream in between them,
You will then get a little something like this...
